Mix It Up

Who ever said you can’t have chicken for breakfast?

When I tell people that I ate a sweet potato with sliced chicken for breakfast, they look at me like I’m a  crazy person. Really?  I don’t know of any commandment or law that prevents me from mixing  up my meal choices.

Eating gluten-free made me rethink what I like to eat  and what foods make me feel satisfied and taste  good.  At first, I struggled with what to eat for  breakfast since I quickly became bored with eggs and rice cereal.  And let me mention, that the amount of rice cereal it took for me to be satisfied, I may as well have eaten a pint of ice cream.  And even more annoying than the calorie count was that I was hungry within two hours.

One morning I noticed a lone sweet potato in my onion basket and thought why not stick it in the microwave for four minutes and have something different for breakfast.  While it was busy spinning, I opened the refrigerator to get milk, which I decided to add to the potato for flavor, I saw a leftover piece of grilled chicken.

Alas, a new breakfast menu was born-mashed sweet potatoes with nutmeg with sliced grilled chicken.  Not only was it delicious, I felt satisfied and was full of energy. The next steps were for me to tackle other meals with unorthodox food.  Rice cereal became an easy dinner when topped with steamed vegetables.  There are no longer any rules in my house that apply to which foods should be eaten at any specific time or meal.

So my advise to you is be a rebel and mix up your traditional meal choices.  It is quite fun to break the food rules – it tastes better and you will feel great
