Red Quinoa Salad

A simple side dish, quinoa salad is great to take on a picnic.  Add cooked chicken and have a one dish meal. Red quinoa has a nuttier flavor than regular and stands up to the hearty flavors of the lamb and eggplant.

 

Serves 6

Ingredients:

1 package prewashed red quinoa

1 carrot, cut into ¼ inch pieces

1 celery stalk, cut into ¼ inch pieces

4 scallions, finely chopped

6 radishes, coarsely chopped

½ cup chopped tomatoes

2 tablespoons chopped flat leaf parsley

1 tablespoon chopped fresh mint

1 tablespoon lemon juice

1 tablespoon limejuice

4 tablespoons extra virgin olive oil

¼ teaspoon salt

pepper to taste

 

 

Equipment: medium saucepan, large mixing bowl, small bowl

  • Cook quinoa following the package instructions.
  • In small bowl, pour the lemon and lime juices, add the salt and whisk until salt is dissolved.  Slowly add the olive oil and whisk until blended.
  • In large bowl, add the quinoa, vegetables, parsley and mint.  Stir in the dressing until ingredients are coated.
  • Set-aside until ready to serve.

Can be prepared early in the day and refrigerated.
