Peach Crumble
peach crumble

I like a thick and crunchy crumble topping on fresh fruit. Enjoy it on peaches and plums all summer long and then switch to apples and pears in fall.
Serves 6

3 pounds peaches, peeled, pitted and cut in quarters
¼ cup brown rice flour
¼ cup millet flour
½ cup brown rice flakes
½ cup light brown sugar
½ cup chopped pecans or almonds
½ teaspoon cinnamon
pinch cloves
pinch salt
4 tablespoons unsalted butter
non-stick vegetable spray

Equipment: 10 inch round baking dish, medium mixing bowl, small microwave proof bowl
• Preheat oven to 350 degrees.
• Coat baking pan with non-stick spray and place peaches in the pan.
• In medium mixing bowl, add the brown rice flour, millet flour, brown rice flakes, brown sugar, chopped pecans, cinnamon, cloves and salt.
• Melt butter in small glass bowl and pour into the dry mixture.
• Mix the ingredients with your hands until evenly blended.
• Crumble topping evenly over the fruit and bake for 30 minutes.
