White Beans Hummus

Okay, so hummus is not a creative choice, but it is a crowd-pleaser. I serve it with crudités and crackers. You can buy pretty good prepared hummus in the grocery store, but it’s easy to make and tastes so much better. The whole beans added before serving add a bit of texture to the dip.

Makes 2 cups

1 16-ounce can of garbanzo beans, drained

2 tablespoons warm water

1/3 cup tahini

1/4 cup lemon juice

2 cloves garlic

1/2 teaspoon cumin

1 teaspoon salt

2 tablespoons olive oil

4 tablespoons white beans (cannelloni preferred)

1/2 teaspoon paprika

Equipment: Food processor or blender

  • Place garbanzo beans, water, tahini, lemon juice, garlic, cumin, and salt in blender or food processor. Blend until smooth
  • Drizzle in 1 tablespoon of the olive oil.
  • Transfer mixture to a serving bowl.
  • Mix in the white beans and serve with rice crackers.
