Chocolate-Covered ...

My idea of the ultimate romantic gesture is to feed a chocolate-covered strawberry to the one I love. A vision of strawberry juice dripping down his cheek with me eating a little piece of chocolate from his lips is imbedded in my mind. My guess is that I saw something like this in a movie when I was a teenager, but the image has stayed with me and I strongly suggest you try it for yourself. The preparation of the strawberries couldn’t be easier.

Ingredients:
8 ounces (2 large bars) good quality semisweet or bittersweet chocolate
12 large, unblemished strawberries with stems

Equipment Needed: cookie sheet parchment paper microwave-safe bowl

Instructions:
• Line cookie sheet with parchment paper.
• In a microwave-safe bowl, break chocolate into pieces.
• Microwave on “defrost” setting for 1 minute, or if your microwave has a “melt” setting, follow the manufacturer’s directions. Check and stir chocolate to make sure it is melted. If chocolate is not yet melted, continue to heat in 15-second intervals until it is completely melted.
• Holding the strawberry by the stem or leaves, dip it into the chocolate and swirl it around until it is covered. (Make sure it is evenly coated.)
• Remove the strawberry from the chocolate and place on prepared cookie sheet.
• Repeat with the remaining strawberries.
• Place cookie sheet in refrigerator for at least 30 minutes to set the chocolate.
• Transfer to serving plate and bring the strawberries to room temperature before serving.

Quick Tips:
The strawberries should be eaten within twenty-four hours of preparation. They will taste good right from the refrigerator, but taste even better at room temperature, when the berry is juicier.
