Peanut Butter Cookies

Just throw all the ingredients in a bowl and within 30 minutes you will have a batch of great tasting peanut butter cookies. Kids love them and they travel well, so put them in your kid’s lunch box or bring them to a friend’s house as a treat.

A word of advice, taste the peanut before you use it. I tasted a batch that my friend made and they did not have a distinct peanut buttery flavor. At first we couldn’t figure out why and then we tasted the peanut butter she used, and it was not flavorful. The cookies will only be as good as the ingredients you use.

My preference is the Fresh Direct or Whole Foods organic fresh ground peanut butter.

1 cup organic smooth peanut butter
½ cup sugar
2 medium eggs, beaten
1 teaspoon tapioca starch
¼ cup chopped bittersweet chocolate

Equipment: medium bowl, cookie sheets

Preheat oven to 325 degrees
• In medium bowl, add the peanut butter, sugar, tapioca starch and eggs. Beat until thoroughly blended.
• Stir in chopped chocolate pieces.
• Place rounded tablespoons of dough on the cookie sheets and flatten them with spatula.
• Bake 10-12 minutes.
